Method

1.Preheat oven to 160°C/140°C fan forced. Grease and line base and sides of a 19x9cm (base measurement) loaf pan with baking paper, extending paper at long sides for handles.
2.Place milk, butter and coffee in a large saucepan over moderately high heat. Cook and stir for 1 minute or until butter melts and coffee dissolves.
3.Remove pan from heat. Add sugar and dates; stir to combine. Whisk in egg until combined. Add sifted flour; stir until just combined.
4.Spoon mixture into prepared pan; level top. Bake for 45 minutes or until a skewer inserted at centre comes out clean. Cool in pan for 10 minutes, then turn out to a wire rack to cool completely.
5.Serve sliced, with cream.

Replace dates with 1/2 cup chopped nuts, such as almonds, hazelnuts or walnuts; price will vary.
