The ultimate chocolate-y, comforting dessert, chocolate self-saucing pudding is so easy to make, it’s dangerous! Using a handful of cupboard ingredients, you’ll have the most delicious dessert in less than an hour.

Preheat oven to 180°C. Grease 6 x 1-cup capacity ramekins.

Using an electric mixer, cream butter and sugar in a bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Beat in vanilla.

Sift together flour and coffee powder. Fold into butter mixture alternately with milk.

Mix in chocolate. Pour into prepared ramekins, or a 5-cup casserole dish. Combine boiling water, brown sugar and cocoa, then pour over ramekins.

Bake for 15-20 minutes, or 40 minutes for large dish, until cooked when tested. Unmould and serve with ice-cream and Hot Fudge Sauce.

I don’t like coffee, do I have to use it in this recipe?

You shouldn’t taste the coffee in this recipe, but what it does is enhance the depth and richness of the chocolate flavour! If you don’t have coffee or really don’t want to use it, you can leave it out of this recipe, or add some extra cocoa.
