Method

1.Preheat oven to moderate, 180°C. Lightly grease a 1 litre ovenproof dish.
2.Place milk and chocolate into a microwave-safe jug. Microwave on medium ( 50% ) power for 2 minutes, stirring after each minute, or until chocolate melts. Mix well.
3.In a large bowl, combine breadcrumbs and 1 tablespoon sugar. Add chocolate mixture. Lightly whisk egg yolks into mixture.
4.Spoon into dish. Bake for 30-35 minutes, until base is set and firm to touch.
5.In a clean, dry bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually beat in remaining sugar until meringue is thick and glossy. Spread warmed jam over base. Pile meringue on top.
6.Return to oven. Bake for a further 10-15 minutes, until the meringue is crisp and lightly browned. Serve with thick cream.

These recipes are a good way to finish up all those little bits of left-over jam in your fridge. Try mixing the jams together.
