1.Line an oven tray with baking paper.
2.Working quickly, sandwich 2 biscuits together with a generous scoop of ice-cream. Use a flat knife to cut away excess cream and smooth edges.
3.Dip edges of sandwich in melted chocolate, then roll in nuts. Place sandwich flat on tray. Repeat with remaining ingredients.
4.Transfer tray to freezer for 30 minutes, until firm.
Soften ice-cream slightly and mix through 2 tablespoons finely chopped glace ginger. Return ice-cream freezer until firm and continue.
Note
