Method
Chocolate mousse with orange liqueur
1.Break the chocolate into pieces and place in a bowl or the top of a double boiler and warm gently over boiling water (ensuring base of bowl does not touch the water), until glossy and just melted. Remove from heat and stir in the butter. Set aside to cool.
2.In a large bowl, beat the egg whites, adding the sugar slowly while beating, until soft peaks form.
3.Mix the eggs and Grand Marnier into the cooled chocolate.
4.Mix a small amount of egg white mixture into the chocolate mixture until well combined, then fold in remaining egg white followed by whipped cream.
5.Spoon into individual glasses or a serving bowl and chill for 3 hours or overnight. Serve with cinnamon oranges (see recipe below).

6.Put the water, honey, cinnamon, cloves and orange rind in a small pot and bring to the boil. Simmer for 5 minutes, then leave to cool completely.
7.Put the sliced or segmented oranges in a bowl, pour the cooled syrup over them. Serve.
