Method
1.Preheat oven to 180°C/160°C fan forced. Line 2 large baking trays with baking paper.
2.Process flour, honey, sugar, egg white and margarine until combined.
3.For each biscuit, place 1 teaspoonful of mixture on prepared tray; spread to a 5cm circle.
4.Bake for 8-10 minutes or until golden brown, swapping trays halfway through cooking. Let biscuits cool on trays (biscuits will crisp on cooling).
5.Sandwich biscuits with ice-cream. Place in the freezer for 15-20 minutes to set. Drizzle biscuits with melted chocolate to serve.
Omit honey; add 1 tablespoon extra caster sugar. You can sandwich bought diet chocolate mousse between biscuits.
