Method
1.Grease and line a 21 x 10cm (base measurement) loaf pan with baking paper, extending paper at long sides for handles.
2.Place chocolate and milk in a large microwave-safe bowl. Microwave on high for 1 minute. Stir to combine. Microwave further 30 seconds, or until melted and smooth.
3.Add coconut and cherries to chocolate mixture; mix well. Pour into prepared pan; smooth surface. Sprinkle extra coconut over top of mixture. Chill 4 hours, or until set. Cut into slices to serve.
