Method

1.Preheat oven to hot, 200°C. Line 2 oven trays with baking paper.
2.In a saucepan, heat milk on medium, to boiling point. In a large bowl, whisk eggs, sugar, cornflour and vanilla together, until thick and pale. Gradually add hot milk, whisking constantly to combine. Transfer to clean saucepan. Stir constantly over a low heat, until mixture boils and thickens. Allow to cool.
3.Meanwhile, place pastry on trays and prick all over with a fork. Bake 10-12 minutes, until puffed and golden.
4.Position pastry half on serving platter. Spread with one-third each hazelnut spread, custard and banana slices. Repeat layers twice, finishing with pastry sheet. Chill for 1 hour.
5.Dust with icing sugar and cut into slices to serve.

This is best eaten on the day it’s prepared
