1.Preheat oven to 180°C (160°C fan-forced). Grease and line a 3Ox2Ocm (base measurement) slice pan with baking paper, extending paper at long sides for handles.
2.Using an electric mixer, beat butter and ¾ cup of caster sugar in a small bowl until light and creamy. Beat in eggs until combined. Transfer mixture to a large bowl. Stir in almond meal, milk and 1 ½ cups of self-raising flour in 2 batches. Spread mixture in prepared pan. Bake for 25 minutes.
3.Meanwhile, make crumble. Combine extra self-raising flour and extra caster sugar with the plain flour and brown sugar in a medium bowl. Using fingertips, rub in cold butter until mixture resembles coarse breadcrumbs. Stir in flaked almonds.
4.Remove cake from oven. Arrange cherries over cake, then sprinkle with crumble mixture. Bake for 25-30 minutes more or until golden. Dust with icing sugar to serve.

Try canned sliced apples or frozen mixed berries instead of cherries. You can bake cake in a 23cm square cake pan; bake cake base for 35 minutes.
