1.Line a 21x10cm (base measurement) loaf pan with plastic food wrap, then with a layer of baking paper, extending paper at long sides for handles. Cut a 1cm slice lengthwise from the cake. Place in base of prepared pan. Cut another slice, then trim to fit alongside the first slice to cover base of pan completely.
2.Using a large metal spoon, combine vanilla ice-cream with cherries in a large bowl. Spread over cake in base of pan. Freeze for 1 hour or until firm.
3.Using a large metal spoon, combine chocolate ice-cream with pistachios; spread over vanilla ice-cream. Cut remaining cake into 1cm slices lengthwise and cover surface of chocolate ice-cream. Cover with plastic food wrap and freeze for 2 hours or until firm.
4.To serve, turn out cassata on a chilled serving plate. Dust top with icing sugar and sprinkle with chocolate shavings.
To make chocolate shavings, run a vegie peeler along the length of a block of chocolate.
