Method

1.Combine ice-cream, rum and raisins. Spoon into a metal container and cover with plastic wrap. Freeze for 2 hours, until firm.
2.Melt butter in a heavy-based frying pan on medium-high. Cook banana for 1-2 minutes each side, until golden. Divide between serving plates.
3.Cook sugar in pan for 3~4 minutes, until caramelised. Remove from heat and stir in cream.
4.Drizzle sauce over banana and serve with ice-cream.
