Method
1.Place the blueberries and sugar in a small saucepan and bring to the boil over a gentle heat, stirring until the sugar is dissolved and the berries are soft. If you are using fresh berries, you may need to add a little water. Set aside to cool.
2.Line a 24cm loaf pan with cling film. Press half of the ice cream into the base of the pan.
3.Place the remaining ice cream in a blender with the cooled berries and juice, blend until well mixed. Pour the blueberry mixture over the ice cream base, cover with plastic and freeze for 8 hours or until firm.
4.Turn out the ice cream and slice into 8 slices. Sandwich ice cream between wafers and serve.
Use a sharp knife to trim wafers and get a perfect fit with the ice cream.
