Method
1.Using an electric mixer, beat butter in a large bowl until pale and creamy. Gradually add sifted icing sugar; beat well until combined.
2.Divide icing equally into two bowls. Using food colouring, tint one portion red for the engine and the other portion blue for the rocket.
3.To make rocket, place one sponge layer on a chopping board. Top with 2 tablespoons blue icing. Top with another sponge layer.
4.Cut cake into a rocket shape. Place rocket on a 40 x 30cm cake board. Spread remaining blue icing over rocket body.
5.To make engine, place one of remaining sponge layers on a chopping board. Top with 2 tablespoons red icing. Top with remaining sponge layer.
6.Starting at a shorter edge, cut a triangle from cake. Cut tip from triangle. Reserve remaining part of triangle to make engine. Reserve cake off-cuts for another use.
7.Place engine on board at base of rocket; secure with a little icing. Cover with red icing.
8.Ice jam rolls; arrange with musk sticks at base of engine to form fire. Decorate cake with writing icing and cachous. Serve.
For littlies, remove cachous before serving.
