Method

1.Process flour with butter and halt the sugar until it resembles fine crumbs. Add 1-2 tablespoons iced water; process until dough just comes together.
2.Turn out dough onto a lightly floured surface. Knead gently until just smooth. Cover with plastic food wrap then chill for 20 minutes.
3.Preheat oven to 200°C (180°C fan-forced). Line a baking tray with baking paper. Roll pastry on a lightly floured surface to a 30cm round.
4.Toss berries in cornflour. Leaving a 5cm border, scatter berries over pastry. Gently fold pastry edge over berries
5.Whisk sour cream, remaining sugar, egg and essence; pour over blackberries. Brush the edges with extra egg. Bake 25-30 minutes or until golden brown.

Budget tip: Reduce the berries to 150g and add 1 finely chopped Granny Smith apple.
