Method
1.Preheat oven to 180°C or 160°C fan. Line three baking trays with baking paper.
2.To make Honey Wafers, place all ingredients in a food processor. Pulse until smooth and well combined. Spread batter onto prepared trays to form 10cm rounds. Bake for 8-10 minutes, until golden. Cool on trays.
3.Mix together mascarpone, cream and icing sugar until smooth. Stir through blackberries. Place a wafer on each serving plate and top with a spoonful of blackberry cream. Cover with another wafer, dust with icing sugar and serve.
