Ingredients

Method

1.Preheat oven 120°C. Line 4 oven trays with baking paper.
2.In a large bowl, using an electric mixer, beat egg-whites and sugar 5-6 minutes, until thick and glossy. Sift cocoa over, beating to combine.
3.Divide mixture between trays. Spread into 25cm discs. Bake 2 hours, until crisp. Cool completely in turned-off oven with door ajar.
4.In a large bowl, whisk caster sugar and cream together. Gradually add melted chocolate, folding to combine. Chill until ready to use.
5.In a medium saucepan, bring reserved cherry syrup to boil medium heat. Simmer 10-15 minutes, until reduced by two thirds.
6.To assemble, place one meringue disk on a cake stand or serving plate. Spread over one-third chilled mousse and top with one-quarter cherries. Repeat layers, finishing with remaining cream and cherries. Drizzle syrup over and sprinkle with shaved chocolate to serve.
