Method

1.Preheat oven to 180°C (160°C fan-forced).
2.Grease a 30cm (base diameter) round pizza tray, Combine caster sugar, salt, yeast, oil and water in a medium bowl. Add flour; mix to a soft dough.
3.Turn dough onto floured surface; knead 5 minutes, or until smooth. Roll to a 30cm round. Place on prepared tray; bake 8-10 minutes, or until light golden. Cool slightly.
4.Spread base with ricotta; top with berries. Sprinkle with demerara sugar. Bake 5 minutes, or until sugar has melted. Serve with ice-cream.

Use fresh berries when in season. Demerara sugar is in the sugar aisle. You can use raw or brown sugar instead. Before kneading/rolling out Dust a clean, dry surface lightly with flour. Have extra flour handy in case dough is too wet to handle. How do you knead? Stretch the dough with one hand as you turn it 90 degrees. with the other.
