Banana and pecan loaf

Sweet, dense and nutty, this glorious banana and pecan loaf is beautiful sliced and served as a mid-morning snack or enjoyed warm with a slather of butter as a rich desert loaf.

Ingredients

Method

1.Preheat oven to moderate, 180°C (160°C fan-forced). Grease and line a 15 x 22cm loaf pan.
2.Sift combined flour and cinnamon into a large bowl. Add all remaining ingredients, mixing until just combined. Pour into prepared pan, levelling top.
3.Bake 45-50 minutes. Remove from oven and cover with foil to prevent further browning.
4.Return to oven and bake further 45-50 minutes, until golden and cooked when tested with a skewer.
5.Cool in pan for 5 minutes before turning onto a wire rack to cool completely.

You’ll need about 3 large, ripe bananas for this recipe.
