Banana and choc chip loaf

This recipe for gluten-free banana loaf is a winner. Chocolate chips help boost its appeal - although you can swap these for raspberries, if you like.

Method

1.Preheat oven to 190°C/170°C fan-forced. Grease and line a 21x10cm (base measurement) loaf pan with baking paper, extending paper at long sides for handles.
2.Combine banana, sugar, choc chips, eggs, milk and oil in a medium bowl. Add flour; stir until well combined. Using a spoon, beat for 2 minutes or until mixture is slightly paler in colour.
3.Pour mixture into prepared pan; smooth surface. Bake for 35-40 minutes or until a skewer inserted at centre comes out clean. Remove from oven. Stand in pan for 5 minutes, then transfer to a wire rack to cool. Dust with icing sugar. Serve cut into slices.

You’ll need about 2 ripe medium bananas for this recipe.
