Method
1.Preheat oven to 180°C.
2.Combine maple syrup, butter alternative, sugar and cinnamon in a small saucepan. Heat gently, until melted and well combined.
3.Arrange apples, pears and figs in a baking dish. Toss maple syrup mixture through fruit.
4.Bake for 25-30 minutes. Add rhubarb halfway through cooking and toss well. Serve warm with low-fat ice-cream.
If desired, use softer “dessert figs” or fresh fig If using fresh, add during last 10 minutes of cooking.
