1.Preheat oven to 160°C/140°C fan forced. Place 4 x 3/4-cup ramekins or ovenproof dishes in a deep roasting pan. In a large heatproof bowl, whisk together cocoa powder, egg yolks and sugar .
2.In a medium saucepan, place milk, cream and chopped chocolate over moderate heat. Stir until chocolate has melted and mixture is smooth. Slowly bring to the boil. Gradually whisk chocolate mixture into egg mixture.
3.Strain mixture into ramekins. Pour boiling water into roasting pan to reach halfway up side of ramekins. Bake 35-40 minutes or until just set. Carefully remove ramekins from roasting pan. Stand for 5 minutes to rest. Serve topped with cream and extra shaved chocolate.
