Baked bananas with pernod and macadamias

This beautiful dessert is easy to make and utterly indulgent, perfect to enjoy after after a big weekend meal. Bananas are baked to perfection in a rich liqueur and caramel sauce, and served with crunchy macadamias and a dollop of fresh cream.

Ingredients

Method

1.Preheat oven to moderate, 180°C (160°C fan-forced).
2.Combine bananas and brown sugar in a 4-cup capacity ovenproof dish. Top with nuts and butter. Drizzle Pernod over. Cover with foil.
3.Bake 15-20 minutes. Remove foil. Bake further 15-20 minutes, until golden. Halve lengthways. Serve warm or cold with cream or ice-cream.

Cooking time may vary depending on the ripeness of the bananas.
