Method
1.Preheat oven to 180°C or barbecue plate to medium.
2.For the sauce, melt butter and golden syrup together in a medium saucepan on low heat. Add brown sugar and stir occasionally until dissolved. Remove from heat and stir in thickened cream. Set aside.
3.Place bananas in a baking dish and bake for 10 minutes or barbecue for 10 minutes on both sides.
4.Carefully slit skins and remove bananas. Transfer bananas to a large frying pan. Pour brandy over. Heat for 1 minute on medium. Turn off heat, light brandy with a match and allow to flame‚ until flames subside. Serve with warm sauce.
Take care when flaming – use a long match or taper and move away from pan. Accompany with ice-cream, if desired.
