Appleberry turnover

Similar to a traditional Italian calzone, this sugary pastry is delicious is the delicious coating to a soft, fruity filling.

Ingredients

Method

1.In a medium saucepan, combine apple, sugar and water. Cook on medium for 3-4 minutes, until just softened. Add berries and set aside to cool.
2.Preheat oven to hot, 200°C (180°C fan-forced). Lightly grease and line an oven tray with baking paper.
3.Using a 12cm round pastry cutter, cut 8 circles from pastry sheets. Spoon an even amount of filling into centre of each. Brush edges with water and fold pastry over filling to form semicircles. Press edges firmly together to seal.
4.Transfer to tray and brush with a little mascarpone. Sprinkle with extra sugar. Bake for 15-20 minutes, until puffed and golden.
5.In a small bowl, beat vanilla sugar into remaining mascarpone. Serve warm turnovers with vanilla mascarpone and a dusting of icing sugar.
