1.Place the apple, orange juice, water, brown sugar and cloves into a medium-sized saucepan. Cover and cook gently for about 8 minutes, or until the apple is cooked. Remove from the heat and allow to cool. Discard the cloves.
2.Place the squares of pastry onto a lined baking tray. Spoon the apple filling onto one side of the square (do not overfill).
3.Brush the edges with a little of the egg mix. Fold over to form a triangle. Press the edges together to seal and crimp with a fork. Make several holes in the top of each turnover to allow steam to escape.
4.Place in the refrigerator for 30 minutes while the oven is preheating to 220ºC.
5.Remove the turnovers from the refrigerator and brush with the egg mix, sprinkle with white sugar and bake for 15-20 minutes until crisp and golden. Serve warm with a dollop of cream or a spoonful of vanilla ice cream.
