Apple and pine nut cake

Perfect for a brunch or afternoon tea, this apple and pine nut cake is beautiful served warm with a dollop of fresh cream.

Ingredients

Method

1.Preheat oven to 180°C (160C fan-forced). Grease a 20cm springform pan.
2.Sift flour and baking powder together into a bowl. Stir in sugar and lemon rind. Make a well in centre and add beaten eggs and melted butter. Fold together gently to make a thick batter.
3.Toss apple with lemon juice. Pour half of batter into prepared pan. Top with half of apple and half pine nuts. Top with remaining batter, then remaining apple and pine nuts. Sprinkle with extra caster sugar.
4.Bake for 1 hour 5 minutes, until a skewer inserted comes out clean. Cool in pan for 10 minutes. Remove and dust with icing sugar.
5.Cut into wedges and serve slightly warm or at room temperature with cream.

Use a mandolin to finely slice the apples, if on hand.
