Method

Apple and Filo Tarts

1.Preheat oven to 190°C (170°C fan-forced). Lightly spray 2 baking trays with oil.
2.Unwrap filo pastry and cover with a damp towel while working. Spray each sheet with cooking oil. Fold sheets in half and spray again.
3.Crumple 1 folded sheet loosely into a 12-13cm round, pulling it gently inwards to make folds. Repeat with remaining pastry sheets to make 6-8 rounds. Transfer to baking trays.
4.Cut apples into thin slices, arranging them among folds of filo, until tarts are filled. Brush with melted butter. Scatter with almonds and sprinkle with sugar.
5.Bake for 15 minutes, until golden. Dust with icing sugar and serve warm with ice-cream.

Red apples can be used, if preferred.
