Brown sugar syrup
Method
1.Preheat oven to 200°C (180°C fan-forced). Place flour, butter and caster sugar in a food processor and pulse until mixture resembles coarse breadcrumbs. Add 2-3 tablespoons cold water, process until a dough forms. Knead lightly until smooth.
2.Cut apple into quarters then in half across. Combine in a bowl with ground cinnamon and brown sugar and set aside.
3.Divide dough into eight portions and roll each into a 14cm square. Place two pieces of apple in centre of each square. Bring up two opposite corners of wrapper to join. Bring up other two corners, pressing along seams to seal. Fold sides around apple in same direction to enclose completely. Place in a large ovenproof dish. Press a piece of cinnamon into top of each dumpling.
4.In a saucepan, bring syrup ingredients and 1/2 cup water to boil. Pour over dumplings and bake for 30-35 minutes. Serve with cream or ice-cream.
