Ingredients

2 quantities basic butter cake mixture

2 quantities basic butter cream

blue and green food colouring

assorted toy animals, to decorate

Method

1.Preheat oven to moderate, 180°C . Lightly grease and flour two 6-cup round pudding basins.(160°C fan-forced).

2.Spoon cake mixture evenly between basins, smoothing top. Bake for 35-40 minutes, until cooked when tested with a skewer. Cool in basin for 5 minutes, before turning onto a wire rack to cool completely. Trim bases of cakes so they can form a sphere.

3.Place two-thirds butter cream in a bowl and tint blue. Tint remaining third green. Sandwich cakes together with a little butter cream. Place on serving plate.

4.Spread blue butter cream all over surface of cake. Pipe on green butter cream to resemble countries. Arrange animals on cake, gently pressing into butter cream.

You can present your cake on a cake board, available from cake decorating shops.
