Method
1.Secure one round cake to the cake board with a little frosting. Reserve ¼ cup of frosting. Sandwich second cake on top of the cake on the board with a little frosting. Spread top and sides with half the remaining frosting.
2.Place the 8cm cutter on top of the remaining cake, using the cutter as a guide, cut an 8cm round from the cake. Place the cake round in the centre of the iced cake, spread top and sides with frosting.
3.Thread three jam rollettes onto a bamboo skewer. Repeat with remaining rollettes to make three towers. Spread top and sides with remaining frosting. Arrange towers around the base of the cake.
4.Place reserved frosting in a microwave-safe bowl. Heat frosting in microwave oven on MEDIUM (50%) for 10 seconds or until slightly melted, drizzle over top of cones. Sprinkle with coconut. Gently push cake topper into top of each cone. Position cones on top of each tower.
5.Cut wafers into door and window shapes. Using picture as a guide, decorate cake with marshmallows. Position wafer door and windows, securing with a little frosting as necessary.
EQUIPMENT 35cm (14-inch) round cake board 8cm (3¾-inch) round cutter 3 long bamboo skewers We only used the white marshmallows from the packets of marshmallows; serve the pink marshmallows at the party. You can make the castle pink and white if you like; in this case you will only need 4 packets of marshmallows. Use the remaining layer of cake to make cake pops, or freeze and use for another event. If using butter cream instead of the vanilla frosting, you will need 3 quantities of butter cream. Be sure to remove the skewers before serving the cake. You need 3 round cakes for this recipe.
