Method
1.Preheat oven to moderate, 180°C. Lightly grease a 23cm round pie dish. Sprinkle with 1 tablespoon of dried breadcrumbs.
2.Heat olive oil in a medium frying pan on high. Sauté bacon for 4-5 minutes until crisp. Add garlic and cook, stirring, for 1 minute.
3.Transfer mixture to a large bowl. Cool slightly. Add zucchini, eggs, cheese, cream and self-raising flour. Season to taste and mix well.
4.Pour into prepared dish. Sprinkle with remaining breadcrumbs. Bake for 25-30 minutes. Set aside for 10 minutes.
5.Serve in wedges with salad.
