Method
1.In a bowl, using an electric mixer, beat cream, icing sugar and vanilla together until stiff peaks form. Transfer to a sealed container. Chill until required.
2.In a second container, combine all the fruit. Seal well and chill until required.
3.When ready to serve, spoon fruit into waffle baskets. Top with cream and enjoy with chilled Champagne.
You could make sweet pastry cases or use bought brandy snap baskets in place of waffle baskets.
