Method
1.Prepare batter according to packet instructions.
2.Heat a large, non-stick frying pan on medium. Spray with oil or brush lightly with melted butter.
3.Add tablespoon measures of batter to pan to form small pancakes. Cook for 1-2 minutes, until bubbles form on surface. Turn and cook for 1 minute.
4.Repeat with remaining batter. Stack 3 mini pancakes, top with strawberries and whipped cream. Dust with icing sugar to serve.
For an adults- only version, soak strawberries in Cointreau before spooning onto pancakes.
