Ingredients

Method

1.Heat oil in a 20cm, non-stick frying pan over medium heat.
2.In a medium bowl, whisk together eggs and green onion. Stir in noodles.
3.Add egg mixture to pan, tilting to spread. Cook 5-6 minutes, or until edges of omelette have set and underside is golden.
4.Top with corn and red capsicum. Cover with lid; cook a further 3-4 minutes, until vegetables are tender and omelette is firm.
5.Serve topped with beansprouts, coriander leaves and sliced green onion. Drizzle with hoisin sauce.
