Ingredients

Method

1.Combine pea mix, bacon, flour, parmesan and chives in a bowl.
2.Whisk eggs and milk in a jug. Add to pea mixture; stir to combine.
3.Heat oil in a large non-stick frying pan over moderate heat.
4.Using 1/4 cup batter for each fritter, cook 4 at a time, 1 minute each side, or until golden and cooked. Transfer fritters to a heatproof plate; cover to keep warm.
5.Serve fritters with relish and salad.
