Upside-down bacon and celery tart

Topped with watercress, this crispy bacon and celery tart is perfect for a weekend brunch with friends.

Method

1.Preheat oven to 200°C (180°C fan-forced). Melt butter in a 20cm (base diameter), 26cm (top diameter) ovenproof frying pan over moderate heat. Add celery, onion and bacon; cover. Cook, stirring occasionally, for 5 minutes or until almost tender. Remove from heat. Stir in thyme and zest. Season.
2.Stack pastry sheets on top of each other. Lay pastry over celery mixture in pan, roll in overhanging edges to form a border. Transfer pan to oven. Bake for 40 minutes or until golden, puffed and cooked. Stand in pan for 10 minutes. Turn out onto a serving plate. Serve topped with watercress.

No ovenproof frying pan? Cover handle with several layers of foil to prevent burning in oven. To select celery, choose leaves that are pale to bright green and stalks that are crisp and snap easily. Use leaves in salads.
