Tropical fruit salad

From breakfast through to dessert this dish is a great sweet snack for any time of the day. Depending on the occasion you can serve it with greek yoghurt, cream, or ice-cream.

Method

1.Combine the water, cordial and sugar in small saucepan. Scrape vanilla seeds into pan then add pod, stir over medium heat until sugar dissolves; bring to the boil.
2.Reduce heat; simmer, uncovered, about 10 minutes or until syrup thickens slightly. Transfer syrup to medium heatproof jug. Cover; refrigerate 1 hour.
3.Combine fruit in large bowl. Pour syrup mixture over fruit.

Elderflower cordial is available from most supermarkets. You can substitute elderflower cordial with orange, lemon or lime cordial.
