Ingredients

Method

1.Place dried fruit in a large heatproof bowl. Pour over 2 cups boiling water. Set aside for 20 minutes. Drain well.
2.Meanwhile, combine remaining water and tea bags in a heatproof jug. Set aside for 10 minutes to infuse. Remove tea bags. Transfer tea to a heavy-based saucepan.
3.Add sugar, vanilla bean and cinnamon. Stir over medium heat for 1-2 minutes, until sugar dissolves. Bring to the boil. Add fruit and reduce heat to low. Simmer, uncovered, for 25-30 minutes, until fruit is soft.
4.Remove from heat and allow to cool for 15 minutes. Cover loosely with plastic wrap and chill for 1 hour. Remove bean and cinnamon stick. Serve with a dollop of yoghurt.
