1.Heat oil in a deep 25cm non-stick frying pan or flameproof dish on medium. Saute onion 4-5 minutes, until golden brown.
2.Add corn, beans and ham, spreading evenly over base of pan. Reduce heat to medium low.
3.In a jug, beat eggs together well and season to taste. Pour into pan. Cook covered for 20 minutes until eggs are set. Serve in wedges topped with fresh rocket leaves.
Add some grated cheese to the recipe, or use a jar of char-grilled vegetables in place of the beans.
