Method
1.Beat eggs together in a large bowl. Whisk in milk and cream and season to taste.
2.Melt butter in a saucepan and pour in the egg mixture. Heat slowly, stirring, for 3-5 minutes, until egg starts to set.
3.Serve scrambled eggs on brioche, top with crabmeat and sprinkle with chives.
Cook scrambled eggs to desired consistency. Longer cooking will result in a thicker, more crumbly texture.
