1.Preheat oven to 180°C (160°C fan-forced). Line 2 baking trays with non-stick baking paper.
2.Roughly grate potatoes; squeeze out as much moisture as possible. Place in a bowl with salmon, eggs, green onions and dill. Season to taste; mix well to combine.
3.Heat oil in a frying pan on medium. Cook 1/4-cup quantities of mixture in batches, flattening with a spatula, 5 minutes each side, until golden and crisp.
4.Transfer to baking trays and keep warm in oven while cooking remaining mixture. Serve with lemon wedges and tartare sauce.
Don’t grate potatoes until you’re ready to cook them, as they will turn a grayish colour.
