Roasted portobello mushrooms with garlic and feta
1.Preheat oven to 200°C.
2.Place mushrooms on a large baking tray. Sprinkle each evenly with thyme and garlic. Drizzle with olive oil. Season to taste. Bake 15-20 minutes until mushrooms are tender.
3.In a large frying pan, heat butter on high. Saute spinach 1 minute, until just wilted. Arrange spinach evenly on toast slices. Top with mushroom and sprinkle with feta. Drizzle with a little balsamic vinegar. Serve with roasted cherry tomatoes.
There’s no need to wash mushrooms beforehand – simply wipe them with a wet paper towel.
