Method

1.Whisk ricotta, egg, sugar and milk in a bowl. Stir in flour until a smooth batter forms.
2.Heat a non-stick pan on medium. Brush with melted butter. Cook heaped tablespoons of batter for 1-2 mins, until bubbles appear. Turn and cook for 1 min, until golden and cooked through. Transfer to a plate. Cover with foil. Repeat with remaining butter and batter.
3.Serve mini pancakes with salmon gravlax.
