Method
1.Preheat oven to hot, 200°C. Line 2 baking trays with baking paper.
2.Place one pastry sheet on each tray. Spread each with pesto; top evenly with tomatoes and prosciutto.
3.Bake 10-15 minutes, until pastry is golden and puffed. Dot with goat’s cheese; cut each pastry square into quarters.
4.Top with salad or basil leaves. Serve drizzled with balsamic vinegar.
