Method

1.In a large bowl, combine mince, onion, breadcrumbs, egg, mustard and thyme. Mix well. Season to taste. Form into 8 even-sized patties in the shape of a log.
2.In a large frying pan, heat oil on medium. Cook patties in two batches, for 8-10 minutes each, turning, until cooked through. Drain on paper towel.
3.Meanwhile, heat a char-grill pan on high. Brush with oil. Cook pear slices for 1-2 minutes each side, until lightly charred.
4.Top each tortilla with lettuce, pear, patty and chutney. Wrap and serve.

Keep patties warm in a slow oven, 150°C. This will also help ensure the patties are cooked all the way through.
