Method
1.Sift flour and baking powder into a large bowl. Stir in sugar. Make a well in the centre.
2.In a jug, blend milk, eggs and butter together. Gradually whisk into flour mixture. Cover and stand batter for 15 minutes.
3.Meanwhile, to make poached berries; combine water and sugar in a medium saucepan. Stir over low heat until sugar dissolves. Bring to boil. Add berries. Cook for 1 minute. Strain berries, reserving liquid. Return liquid to pan and simmer for 15-20 minutes until syrupy. Cool slightly before stirring berries and vanilla through.
4.Heat a large non-stick frying pan on medium. Brush with a little extra butter. Pour 2 x 1/4-cup measures of batter into pan, tilting to make two circles. Cook for 2-3 minutes until bubbles begin to appear on surface. Turn and cook for a further 1-2 minutes, until golden. Cover to keep warm. Repeat with remaining batter.
5.Serve pancakes in a stack, drizzled with poached berries and accompanied with cream or yoghurt.
