Method

1.Preheat oven to 220°C. Lightly grease and line a baking tray with baking paper.
2.In a large frying pan, heat oil and butter on medium. Add onions, zest, juice and thyme, cook on medium 8-10 minutes until onion is tender. Add sugar and wine. Simmer 10-15 minutes until caramelised. Set aside to cool.
3.Place pastry on prepared tray. Score a 1cm border with a sharp knife. Brush with egg-yolk. Use a fork to prick base. Spread caramelised onion over pastry.
4.Cut cherry tomatoes into quarters, without cutting all the way through, so they resemble flowers. Place over onion. Sprinkle with feta.
5.Bake 12-15 minutes or until pastry is golden. Serve tart topped with prosciutto and rocket.

If preferred, you could drizzle the tart with caramelised balsamic vinegar. White or brown onions could be used in place of red.
