Method

1.Using an 11cm round fluted pastry cutter, cut bread into rounds. Top 4 rounds with a basil leaf, mozzarella, another basil leaf, then top with remaining bread rounds. Press to secure.
2.On a plate, combine flour and parmesan. Pour egg into a shallow bowl. Dip sandwiches into flour mixture, then egg.
3.In a large non-stick frying pan, heat oil over moderately high heat. Cook 3 minutes each side or until golden and crisp. Serve sprinkled with salt.

The Italian name for this tasty treat is Mozzarella in Carrozza. Instead of fresh basil leaves, try spreading bread with bought basil pesto.
