Method

1.Preheat oven to moderate, 180°C. Line a muffin pan with paper patty cases or line with baking paper.
2.Place potatoes in small saucepan and cover with cold water. Bring to boil and cook for 6-8 minutes, until tender. Allow to cool and slice thinly.
3.In a jug, whisk eggs, cream and chives together. Season to taste.
4.Divide trout and potato slices among six cases. Fill remaining cases with onion and feta. Pour egg mixture evenly between recesses.
5.Bake for 15-20 minutes, until firm and golden.
6.Allow to cool in pan for 5 minutes, before transferring to a wire rack to cool.

Buy pre-made jars of caramelised onion from your supermarket or deli, or make your own by slowly sauteing sliced onion and adding a little balsamic vinegar and brown sugar.
