Mixed berry damper with jam andamp; cream
1.Preheat oven to 220°C (200°C fan-forced). Grease a baking tray.
2.Place flour in a large bowl. Using fingertips, rub in butter to make fine crumbs. Stir in berries. Add milk. Using a round-bladed knife, mix ingredients. Turn dough out onto a lightly floured surface and knead gently.
3.Shape dough into a 20cm round. Place on prepared tray. Using a lightly floured knife, mark 8 equal wedges on top. Brush top with extra milk.
4.Bake for 25 minutes or until damper is golden and sounds hollow when tapped. Transfer to a wire rack. Serve warm with jam and cream.
